Dr. Cervantes Lee is a visiting assistant professor of multi-unit restaurant management concentration at UNLV Hospitality College. The new curriculum is made possible by a general gift from the co-founders of Panda Express. He has acquired US$ 100 billion assets over 20 years principal investment career.
